Location vineyards: Property of Rapitalà - Camporeale (PA), between 300 and 600 mt. ULS
Harvest Time: August - September
Farming system: Guyot
Alcohol grade: 13,5 %
Processing technique: The chardonnay is getting right maturation in august, the “catarratto is harvested in mid September. To preserve the aromas is limited the contact with oxygen and the atmosphere is controller during the several phases of wine production: soft pressing, static maturation in cold and fermentation with selected leaven . The control of temperature help in going on with fermentation for other two weeks. The analytical control are daily. The wine are kept on leaven until the assembled of cuvée in march.
Tasting notes: Vast olfactory sensation with notes of mediterranean aromas (tomato leafs, sage, pickled flower buds)
Taste: Wide taste, satisfying as these earth’s sun, where the cataratto shows unique characteristic, unrepeatable in others place
Matchings: Savor fish, sea food soup of fish and even spiced, white meat hot and cold
Size of the bottle: 75 Cl
