Technical of production: Cryo-soaking, soft pressing and fermentation at controlled temperature, 4 months on the dregs with daily shaking
Scent: scents afford distinct profile on the nose with hints of yellow wild flowers, broom and acacia, blended with fruity nuances of white-fleshed fruit, apples and ripe peaches
Taste: minerality, lavish, elegant and rigorous
Matching: Its character stands out with refined dishes. It finds a perfect balance with trout patè with caviar, asparagus in Hollandaise sauce, fowl liver, potato gnocchi with herbs. Perfect with smoked cold cuts and goat’s milk cheese served with olive oil, pepper and seasonings
