Vine: Selected vine plantation cultivated in the island of Pantelleria. Moscato di Alessandria aka Zibibbo
Location: Isola di Pantelleria
Harvesting: Manual,maturation during the second week of September
Cultivation: Espallier cutted at cordone speronato in the zone of Noto and at tiny tree in Pantelleria
Alcoholic rate: 15,5 %
Technical of production: Soft pressing of grapes, after a short contact with skins and fermentation at controlled temperature (17° - 18° C.) to get the right alcoholic rate of 5° - 6°. Addition of distilled wine until 16° to lock the alcoholic fermentation and to save a good quantitative of must's sugar.
Maturation: A time of 5-6 in silos
Refinement: At least 6 months in bottles.
Scent: wide, rich and aromatic, raisins, marmalade of apricot and vanilla notes.
Taste: fulfill and soft, big structure, intense aromas of apricot, dry fig at long persistence
Matching: Good match with pastry
Temperature: 12° - 14° C, save in fresh ambient (13°-15°C), protected from the light
Time: for several years save in good wine cellar
Size: 50 Cl
