Harvesting: Manual, maturation in the first week of September
Cultivation: Cultivation at Spalliera and at cordone speronato in the zone of Noto and at alberello classico in Pantelleria
Alcoholic rate: 15,5 %
Technical of production: Soft pressing of grapes, after a short contact with skins and fermentation at controlled temperature (17° - 18° C.) to get the right alcoholic rate of 5° - 6°. Addition of distilled wine until 16° to lock the alcoholic fermentation and to save a good quantitative of must's sugar .
Maturation: Until spring
Refinement: At least two months in bottles
Scent: Intense and aromatic, delicate moscato with notes of sage, acacia and apricot
Taste: fulfill, soft with notes of honey and pleasant base of dry fig and raisins
Matching: Dry pastry, fresh and dry fruits
Temperature: In ambient fresh (13° - 15° C.)
Time: Drink within three years
Size: 75 Cl
