Processing technique:	The grapes are harvested and in second time start wine producing because the maturation begin in different time. In property of Rapitalà sauvignon and viognier get right maturation in the last of august, grillo is harvested in first ten days of September. To preserve the aromatic of the three vine plantation, it is defined in each single step of maturation from balance of sugar and acidity, preventing every single kind of water stress. For the three grapes is used a particular technique of wine producing, which divide the different quality of must that slowly go in fermentation. In owning to this technique, vine plantation shows its best aromatic characteristic

Taste:	Balanced taste, fruit with notes of grape fruits
Matchings:	Good with sea fruits and sushi e sashimi, but it is even good with swordfish ,black bream, gilthead bream, first dish of vegetables and cheeses
